Cold Curry Vegetable Salad

I admit this salad seems pretty strange, and I'd be shocked if you found the recipe any place else. It's something that came out of a vague taste memory of mine.  And it has Lima beans in it ... that dreaded vegetable remembered by many people of a certain age as a childhood horror.

In other words, you'll need an open mind to try this. But at our house, we find it so good, we sneak spoonfuls of refrigerated leftovers between meals. Tell me, are you brave enough to make this?

Servings: 6 people   Serving size: 1/2 cup   Preparation time: 15 minutes
Ingredients
16 ounces mixed frozen vegetables
1/2 cup plain, low-fat yogurt
1/2 cup low-fat mayonnaise
2 tablespoons red wine vinegar
1/2 teaspoon Spike
1/2 teaspoon curry powder
1/2 teaspoon Dijon mustard
​iceberg lettuce
Directions
1. Cook frozen vegetables according to package directions
2. In a medium bowl, mix together the rest of the ingredients.
3. Stir in the cooked veggies.
4. Serve warm or cold on individual plates on a bed of lettuce.

Seriously Healthy Breakfast Bowl

​Do you equate healthy with blah or worse? Be not afraid of this delicious and filling hot breakfast that's almost as easy to make as cooking oatmeal.

Serves: 4 1/2    Serving size: 1 cup   Preparation and Cooking time: 30 minutes
Ingredients
1 cup whole grain bulgur wheat
2 cups water
Pinch of salt
1 cup grated or finely chopped apple
2 tablespoons chia seeds
2 tablespoons flax seeds, *ground
2 tablespoons pumpkin seeds,                 *ground
2 tablespoons sesame seeds or

     hemp seeds
unsweetened flaked coconut
​Milk of your choice

Optional ingredients to add on top: blueberries, banana slices

*Coffee grinders are great for grinding these.
Directions
1. In a saucepan with lid, bring the water to boil.
2.  Add the salt and stir in the bulgur.  Simmer, covered,  for 20 minutes. 
​3. While bulgur is cooking, grate the apple and prepare the seeds.
4.  When bulgur is cooked, stir in all the ingredients with the exception of the milk and coconut.
5. Fill four cereal bowls with 3/4 cups of the mixture and top with flaked coconut. 
​6. Serve with a pitcher of warm almond or coconut milk and fruit such as blueberries or banana slices for individual preference.

Lamb Burgers with Parmesan Cheese Sauce

Ground lamb is most often available in the spring.  I overdid it a bit with the Parmesan Cheese Sauce in this photo, but boy, is this dish tasty! I'm not a big fan of roast lamb, but making a broiled burger of ground lamb is very different because the grease naturally drips off.  Serve with fresh roasted asparagus and new potatoes to welcome spring.


Serves: 4   Serving size: 1/4 pound  
Preparation time: 15 minutes   Cook time: 10 minutes
Serves: 6   Serving size: 1/4 cup 
​Preparation time: 20 minutes  
Ingredients for Burgers
1 pound ground lamb​
2 tablespoons fresh parsley, chopped
1/2 teaspoon coarse of kosher salt
1/2 teaspoon black pepper
1/2 teaspoon paprika

Directions for Burgers
If grilling, preheat grill.
1. In a bowl, combine all the ingredients and mix well. (Mixing it by hand seems to work best.)
2.  Form mixture into four patties, 1/2 to 3/4 inch thick.
3. Grill or broil using medium heat., 4 to 5 minutes on each side. Tastes best if you cook until you see a little bit of pink in the center.

Ingredients for Parmesan Cheese Sauce
1 tablespoon onion, finely chopped
2 teaspoons flour
4 tablespoons Parmesan Herb Cheese Mix
1 cup plain yogurt
1 tablespoon butter
1/2 cup milk
1 large egg

Directions for Cheese Sauce
1. Beat egg.
2. Add yogurt and set aside.
3. Melt butter in saucepan.
4. Saute onion in the butter.
5. Slowly add flour, mixing well as you do. Add milk while continuing to stir.
6. Add the Cheese Mix.
7. Stir in the egg mixture and heat through. Do not overheat.

Serve warm over broiled burgers or use as a base for mushroom soup. In fact, experiment with the many ways you can use this sauce .

    "This chicken salad is fabulous" my writer friends told me at our little luncheon. "We want the recipe."

    "I've been thinking of starting a recipe blog," I said. "This will be the first dish on it. Will that work for you?"

    "Do it!" they urged. 

    I've thought about creating a cookbook for years, but with all of my other activities, I realize that's not going to happen in the traditional sense.
