Summer-Easy Strawberry Pie

PictureSummer-Easy Strawberry Pie

The secret to making a good strawberry pie is in the glaze. I think I've tried every glaze recipe out there, and I've settled on a retro one that's easy and always garners raves, whether I'm bringing it to a potluck or welcoming a new neighbor with one. And talk about easy ... I use a store-bought crust. Now that's summer-easy cooking.

Servings: 8  Preparation Time: 30 minutes  Serving time: 2-3 hrs

Ingredients
3 pints fresh hulled strawberries
1 store-bought refrigerated pie crust
1 cup sugar
1/4 cup cornstarch
1 cup water
3 tablespoons strawberry Jell-O

Directions
1. Bake pie crust according to package directions and cool
2. Combine sugar, cornstarch, and water in a pan and cook over low heat until thick, stirring often. 
3. Stir in Jell-O and cool to room temperature.
4. Wash and hull berries. *Place half in bottom of pie crust. Pour half of the cooled Jell-o glaze over them.
5. Place remaining berries on top and pour remaining glaze over them, coating all the berries.
6. Refrigerate and serve with whipping cream once the glaze is set.

*Note: If the berries are very large, slice some in half and place in the bottom of the pan.

Smoothies are some of the best foods to help with the stomach problems I have. On top of that, they can be delicious. My hubby, being the loving guy he is, came up with this recipe for the smoothies he regularly makes for me. Let’s look at the benefits of each ingredient.
 
Greek yogurt has probiotics that help promote a healthy gut by increasing the good bacteria that helps digest food. It has other health benefits as well. http://health.usnews.com/health-news/blogs/eat-run/2014/05/05/the-health-benefits-of-greek-yogurt
 
Aloe vera juice has been reported to aid in digestion and the elimination of constipation. There are some cautions however: http://www.livestrong.com/article/534154-is-aloe-juice-good-for-your-stomach/  You may want to substitute apple juice for the aloe vera.
 
Green veggies have an abundant amount of antioxidants and less sugar than fruits. They also provide fiber. http://www.usatoday.com/story/news/nation/2013/08/03/green-smoothies-nutrition/2518141/ My hubby buys a big bag of healthy greens at Costco and repackages them in small baggies. Then he freezes them so they are ready to go into the blender.
 
Berries contain antioxidants that decrease inflammation and phytonutrients that help fight disease. http://healthyeating.sfgate.com/health-benefits-fruit-smoothies-6124.html. During berry season, we use fresh, and also use our Seal-a-Meal and freeze them for the off season. (We’ve learned to freeze the berries first before sealing them.) Blueberries are probably the most nutritious, but we also freeze strawberries and raspberries. Hubby often uses two kinds of berries in the drink.

Good-for-Your-Tummy Smoothie
 Ingredients
1 cup frozen greens
16 ounces aloe vera juice (may be
     flavored if  desired)
1 cup each two kinds of berries (fresh
​     or frozen)
2 tablespoons ground flax seed
1 1/2 cups Greek yogurt
Directions
1. Blend the greens, juice, and berries until smooth.
2. Add the flax seed and yogurt and blend again.
3. Pour 8 ounces in a glass and enjoy. Refrigerate the remaining for later.

Strawberry Sparkle Punch

Planning a graduation party? A wedding shower? This punch is the perfect beverage for such an occasion. I first served this for the launch of my Home of the Heart romance novel. It was such a hit, I continue to serve it for special occasions. It's a bit labor intensive, but so worth it!

​Servings: 15   Serving size: 1 cup   Preparation time: 20 minutes
Ingredients
2 cups strawberries (may be frozen and thawed)
3 ounces package strawberry gelatin
1 cup boiling water
6 fluid ounces lemonade frozen concentrate
3 cups ice cold water
32 fluid ounces cranberry juice cocktail
32 fluid ounces ginger ale

​A few fresh strawberries if desired.

 Directions
1. Put strawberries in blender container, cover and blend on low speed until fruit is pureed.
2. Stir to dissolve gelatin in boiling water.
3. Add frozen lemonade concentrate and 1 cup cold water to gelatin mixture to cool. 
4. Add 2 cups of cold water to punch bowl.
5. Add cranberry juice and strawberry puree to punch bowl.
6. Add ice.
7. Slowly pour in ginger ale and stir gently.
Note: you may want to purchase extra cranberry juice and freeze it into holiday-appropriate shapes to use as ice cubes. Float a few fresh strawberries if desired.
