Rice Pancakes

PictureDelicious Rice Pancakes
​​These simple, delicious, and healthy pancakes are a favorite multi-generational family treat at our house. When cooking rice for dinner, I double the amount so I have plenty for the main ingredient the following morning. Sometimes I even quadruple the amount and double the recipe, as the pancakes freeze well and can be quickly thawed for an extra special breakfast.
Update: I recently tried this recipe with leftover cooked 
quinoa, and it made delicious crunchy pancakes.

Servings: 6  Preparation time: 30 minutes
Ingredients
2 large eggs
1 3/4 cup cooked rice
(I prefer brown rice.)
3 tablespoons wheat germ
1/4 teaspoon salt
(I prefer Lite salt.)
1 teaspoon pumpkin pie spice

 Instructions
1. In medium-sized bowl, beat eggs slightly
​2. Stir in rice, wheat germ, salt, and pumpkin pie spice
3. Heat griddle to 325 degrees.
4. Scoop mixture with a 1/4 measuring cup and drop onto the griddle. Flatten with the bottom of the measuring cup to create 3" diameter pancakes.
5. When the cakes have browned on one side, turn over and cook until browned on the other side.
Serve with syrup, honey, jam, or a mixture of half applesauce and half plain yogurt. Add the pumpkin pie spice to this mixture if you like.

Black Bottom Banana Muffins

​​I can't believe I haven't already shared this extra-delicious muffin recipe with you. Of course the recipe itself is not the delicious part ... it's the rich chocolate you discover as you bite deep into this moist treat. Easy to make and a great way to use over-ripe bananas that take the place of shortening.
Servings: 12  Preparation time: 30 minutes  
​Baking time: 25-30 minutes  Eating time: Anytime!
Ingredients
3 medium ripe bananas
1/2 cup no-sugar applesauce
1 large egg
1 cup sugar
1 teaspoon vanilla extract
1-1/2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup unsweetened powdered baking cocoa
​1 cup dark or semi-sweet chocolate chips
Instructions
1. Preheat oven to 350°.
2. Arrange paper muffin cups in a muffin tin.
3. In a mixing bowl, cream bananas and sugar together. Mix in applesauce, egg, and vanilla.
4. In a separate bowl, combine the flour, baking powder, baking soda, and salt.
5. Add the flour mixture to the banana mixture and mix well.
6. Place half of this batter in the now-empty flour bowl, and add the cocoa powder and chocolate chips. Evenly distribute this mixture in the bottom of the muffin cups.
7. Spoon the vanilla batter on top, distributing evenly.
8. Bake for about 25 to 30 minutes. Test for doneness with a toothpick. (It will come out clean.) Tops of muffins will be golden brown.
9. Cool and serve.

    "This chicken salad is fabulous" my writer friends told me at our little luncheon. "We want the recipe."

    "I've been thinking of starting a recipe blog," I said. "This will be the first dish on it. Will that work for you?"

    "Do it!" they urged. 

    I've thought about creating a cookbook for years, but with all of my other activities, I realize that's not going to happen in the traditional sense. So I'm happy to have this venue to share my favorite dishes and discoveries. I hope you'll find some dishes here that become some of your favorites too.
