Seriously Healthy Breakfast Bowl

​Do you equate healthy with blah or worse? Be not afraid of this delicious and filling hot breakfast that's almost as easy to make as cooking oatmeal.

Serves: 4 1/2    Serving size: 1 cup   Preparation and Cooking time: 30 minutes
Ingredients
1 cup whole grain bulgur wheat
2 cups water
Pinch of salt
1 cup grated or finely chopped apple
2 tablespoons chia seeds
2 tablespoons flax seeds, *ground
2 tablespoons pumpkin seeds,                 *ground
2 tablespoons sesame seeds or

     hemp seeds
unsweetened flaked coconut
​Milk of your choice

Optional ingredients to add on top: blueberries, banana slices

*Coffee grinders are great for grinding these.
Directions
1. In a saucepan with lid, bring the water to boil.
2.  Add the salt and stir in the bulgur.  Simmer, covered,  for 20 minutes. 
​3. While bulgur is cooking, grate the apple and prepare the seeds.
4.  When bulgur is cooked, stir in all the ingredients with the exception of the milk and coconut.
5. Fill four cereal bowls with 3/4 cups of the mixture and top with flaked coconut. 
​6. Serve with a pitcher of warm almond or coconut milk and fruit such as blueberries or banana slices for individual preference.

    "This chicken salad is fabulous" my writer friends told me at our little luncheon. "We want the recipe."

    "I've been thinking of starting a recipe blog," I said. "This will be the first dish on it. Will that work for you?"

    "Do it!" they urged. 

    I've thought about creating a cookbook for years, but with all of my other activities, I realize that's not going to happen in the traditional sense. So I'm happy to have this venue to share my favorite dishes and discoveries. I hope you'll find some dishes here that become some of your favorites too.
